Based on your post, it sounds like you're wanting to undo cutting text to your clipboard on your iPhone. Select, cut, copy, and paste text on iPhone covers the available actions. Since an "Undo" editing option isn't available, you'll want to "Paste" the text back to the text field it was cut from.
"Paste: Tap Paste or pinch open with three fingers."
