Will Apple airport time capsule router work for fiber optics as only router?

Possibly, but the Time Capsule was designed to work with standard cable and DSL modems, so whether or not it will interface correctly with the fibre optics ONT is open to question.
The Time Capsule will need to be provided with an Ethernet cable connection from the ONT, so you may need to check with your Internet Service Provider to make sure that they will be able to provide this type of connection to the Time Capsule.
This is one of those times when you won't know if something will work.....or how well something will work....until you try it out in your home. For what its worth, I was able to help my neighbor set up an AirPort router with a Verizon ONT that was modified by the Verizon technician to provide an Ethernet signal to the AirPort.
