iOS/iPadOS does not support selective hiding of email or text messages - or installed Apps.
Perhaps consider that an iPad is principally a single-user device - that for most users will not be shared with others. If anyone else has access to your iPad, pretty much all of your sensitive data (including your Keychain and AppleID account settings) are accessible.
