I figured out how to add an image to a signature.
I figured out how to add a hyperlink to a signature.
None of the advice on how to click on the image, click edit and add a link... works!
Do I need to abandon my beloved Mac mail and go back to Microsoft 365???

That is your option yes.
you can always include the stand alone URL.
There is no guarantee how a recipients email client parses your sent email. For example stripping out all attached images— you have no control over this once it leaves your computer...
keep it simple.

Even if you used Microsoft 365, I would not see your embedded images and all your included links would not be active they would be plain text. You are spending too much time on something over which you have no control. The recipient controls how their email is formatted and displayed.
