I managed to get the menu bar back in fullscreen mode but there doesn't seem to be an option to keep the dock visible in fullscreen mode. I'd be happy just changing the fullscreen option to make the window as big as the open space between the menu bar and dock. Is that possible??

FWIW, not all Apple apps will maximize to the height & width of the screen such as Safari & Preview. You can use third-party apps such as Magnet, Rectangle and Moom.

I mean like, can I change the fullscreen button to have the same effect as zoom with the cursor in the corner so that it maximizes to the available screen width and height? I have the setting set to zoom but it just expands to the height not the width. Are there zoom settings maybe?
