Maybe file claim with your insurance coverage? Otherwise, you buy a new watch as Apple isn't going to replace a stolen one.

You buy another one. Apple doesn't cover lost or stolen watches; if you have a non-Apple insurance policy which does, they give you money instead of replacing it.
