I'm trying to rename the cloud folders in finder, but the "rename" option isn't listed when I show the options. I also opened the "get info" option and under Name & Extensions, the option is greyed out. This is occurring for both Google Drive & Microsoft OneDrive.

I'd ask that on a Google or MS forum. Their apps require these folders to be named a given way, you'd need to ask them how to resolve the issue.
A possible workaround would be to assign a label to one of the folders if it will take it.

Then I wouldn't rename them...
rename option not list for a reason(?)
Unfortunately I have 2 accounts with Google Drive so it gets confusing have 2 "My Drive" folders in Finder.
