If I reset all settings is the esim will deleted (not factory settings) ?

According to the information found at Return iPad settings to their defaults - Apple Support, when you Reset All Settings, the following occurs:
Reset All Settings: All settings—including network settings, the keyboard dictionary, location settings, privacy settings, and Apple Pay cards—are removed or reset to their defaults. No data or media are deleted.
Based on this, there will be no effect on any eSIM that may be installed.
