Seems the watch face is the default


Wondering if Apple Support's article (link below) can help:

Turn on and wake Apple Watch – Apple Support


Eg: says:

After you turn the watch on ... it will start up ....

"The watch face appears when Apple Watch is on."


"When your Apple Watch is in Low Power Mode, Always On is turned off.

To see the watch face, tap the display."


"When your Apple Watch is turned off,

you can press and hold the Digital Crown to see the time".


"You can turn on / off "Wake on Wrist Raise" & "Wake On Crown Rotation".

open the Settings app  on your Apple Watch, go to Display & Brightness"


"For some apps, you can set Apple Watch to return you to where you were before it went to sleep. See details in the above article to change settings if you want".


If you wish:

"You can keep the display on longer when you tap to wake your Apple Watch."

The referred article contains the needed info, but there are two items to note. First, "...just stop what you're doing to return to the clock face": Many apps including Workout need you to click DONE or similar, and you need scroll way down to find DONE, else it keeps running, so in my case it was never getting turned off. Second, the article points to the Return to Clock tab (which I'd found), and then to the per-application configurability of this setting. When I checked the Workout app, it had Return to App enabled by default, so the watch was always going back to Workout until I clicked DONE in the app. BTW: The explanation for Return to App within the iPhone Clock application is actually very good.
