Can you clarify which information of yours is provided to the call recipient? If the information is your Phone Number and Name, then that is provided through the Caller ID feature from your carrier. You can make anonymous phone calls by changing the following setting in the Settings app ➡️ Phone ➡️ Show my Caller ID: Set this switch to OFF. NOTE that if call folks anonymously then the recipient may not answer your calls.

Your contact information may also be shared through text messages as well. If you do not wish to share your Name and Photo via text messages automatically, then open Settings ➡️ Messages ➡️ Share Name & Photo ➡️ Name & Photo Sharing: Set this switch to OFF.
