Transfer of iphone information
I gave my husband my old iphone 7 and i upgraded to an iphone SE. Do I need to erase all my stuff off his iphone 7 so he can have his own id, and will it affect my iphone SE? how do I do that?

You don't absolutely have to do all that but if you don't then there is some risk of your information being left behind on his device and if you are not careful it will be integrated in his iCloud information.
I presume he has his own Apple ID? If not then see How to create a new Apple ID - Apple Support
