SSH and launch GUI
Can I launch the GUI from the terminal? Remotely using SSH ?

It is unclear where you want the GUI displayed.
macOS is not X11 based, and apps cannot be redirected to a remote X11 Display Server.
The GUI app is going to run and display on the Mac. But you can use VNC to send a copy of the screen to a remote system.
