Will Apple replace my damaged iPhone with a different color?
If I’m filing an insurance claim to replace a damaged iPhone, is it possible for Apple to send me a different color than what I originally had?

If by insurance, you mean Apple Care+ with Theft and Loss, not unless its downright impossible for Apple to produce the same color.
Apple will replace the lost or stolen device with an identical device in almost all instances.
Should it be impossible to get the same color for any reason, they will probably inform you of it and tell you what is available.
If by insurance you mean a 3rd party insurance company, then it's entirely up to them what they replace it with, Apple is not involved in third party insurance replacements in any capacity.
