So I just discovered the two phone I bought for me and my wife were all refurbished, but apple sold them as new. I paid over $2500 f9r the two phone. Though the phone never had any issue till date, but do I have ground for a claim or not

That is not an indicator of New/Refurbished status. The serial number was used to identify the factory, and build dates, but Apple now uses random serial numbers.
Check the model number at Settings - General - About - Model = ??
M = New
N = Replacement
F = Refurbished
P = Personalized.
3 or 5 = Refurbished by an Apple authorized facility.

If you bought them using an official Apple channel (Apple Online Shop, Apple Store, Apple Authorized reseller), and if you're sure they are not new, contact Apple (Contact Apple for support and service ) or the Apple Store or the authorized reseller, and demonstrate your problem.

Serial number doesn't say anything about your iPhone new/replaced/refurbished status.
