Is it ONLY iMessages that synch between Apple devices using the same Apple ID, or do SMS messages on one device (e.g. iPhone) also get picked up in iCloud and moved onto the other devices?

Both types can be synced. For SMS and MMS messages, you need to turn on the option for the other devices in Settings➜Messages➜Text Message Forward.
