My sister found some airpods and we’ve been waiting for someone to track them down. But we don’t want people to have our location if it connected to their find my iPhone. If I restart it will they be able to see my address?

Handling Found AirPods:
Do the right thing: Hand this in the local authorizes, or to the Lost & Found department of where you found these. If should outside of a store, hand it into the store, and ask the manager to place it aside. If anyone recalls being there, then they'll call.
