The tracking function works through Find My and your Apple ID. Using borrowed AirPods should not give them any privileges, provided you didn't give them your Apple ID login credentials.
(if they did persuade you to disclose your password, you simply need to change the password for your Apple ID to restore full security. This is easy, if you need it please see If you forgot your Apple ID password - Apple Support )

It didn’t happen to me and I would never give out any passwords or appleid info. This did happen to someone very close to me though. She used her uncles AirPods on her phone and then was able to see his location on her phone. Not sure if it was via Find My. This is a true story
