What if my son has Apple Music already? If I start a family plan, and invite him, what happens to his Individual apple music plan and monthly charge that is associated with his apple id? Do all of his preferences and history go away?

If you have an Apple Music Family subscription, any family members with existing individual subscriptions will have their plans automatically cancelled and will then fall under the Apple Music Family plan. You can learn more about that here: Get an Apple Music family subscription

If you already set up Family Sharing, everyone in your family group will automatically have access to Apple Music after you subscribe.
