I would like to delete emails using only my left hand.

The standard shortcut to delete things are command+backspace

How can I change this setting?

You can try adding a different shortcut in System Preferences->Keyboard->Shortcuts->App Shortcuts

Add a new shortcut, choose Mail as the application, type the text of the menu: "Delete" (without the quotes), and press the desired shortcut. You should immediately see it in Mail pressing the Edit menu.

Be careful not to choose a shortcut that is in use for another purpose.
