Writings mysteriously disappear on iPad Air M1

I'm facing a strange bug while using Notes on my Ipad Air M1 (I bought it 3 months ago, and it's in perfect condition (no no scratches, no damage, bought directly from Apple).

The writings mysteriously disappear but after some movements with my apple pencil - the writings come back. After some writing again - disappears and comes back again. This bug also occurs when I scroll up or down.

Any ideas of why the **** the technology costs 600$ has these minor but annoying bugs?
