My Watch Ultra Wayfinder face is showing coordinated in decimal degrees
instead of degrees, minutes, seconds as presented on Apple advertisements.
How can I change coordinates format?

From within the Settings in your watch, find Compass then click on it. Scroll to the Grid System section and checkmark the unit you prefer.

This sounds like something that a Garmin handheld GPS is capable of, but if you want to suggest something similar to Apple, you can do that here:
I am a map reading instructor land navigation. In my opinion the compass app is not adequate for land navigation. prior to heading to the hills hiking etc. You must make a plan or what we all know as a route card, which shows start point grid reference, grid references to check points along the route and bearing, distance, time, description of ground to cover. All this information can be uploaded to GARMIN devices. For safety it is important all this information is recorded and shared prior to setting out on a hike.

I have sent feedback on many occasions but no one from apple responds. In my opinion the compass app should NOT be used for safety sake until it allows users to input routes etc. Informing people of the route you are going to be taking, your start waypoint and end waypoint prior to setting out trekking the country side this is essential to safety. This app needs to be updated giving land navigators the opportunity to change the settings to bearings in mils and grid references. Full MGRS configuration.
