Message background has turned black when I reply to an email.

When I Reply to an email as soon as I send it, the background turns black. This happens on both my iPad Air 12.5.6 (older so it won't upgrade), and on my Mac Mini OS 10.13.6 (also older and can't upgrade.

I've read several fixes for this, but I can't find any method of getting out of Dark Mode;

iPad Pro, 11-inch, 4th Gen, Cell mmW

Manually color-code emails
1. In the Mail app  on your Mac, select one or more messages in the message list.
2. Choose Format > Show Colors, then select a color.
Mail changes the background color of the selected messages in the list.

Use a rule to color-code emails
1. In the Mail app  on your Mac, choose Mail > Settings, then click Rules.
2. Click Add Rule.
3. Choose whether any or all of the conditions have to be met. 
4. Click the conditions pop-up menu to set the conditions for color-coding. For example, choose “Priority is high.”
5. Click the “Perform the following actions” pop-up menus, choose “Set Color of Message,” then choose either “of background” or “of text.”
6. Choose a color from the pop-up menu, or choose Other and use the Colors window to select a color.
7. Click OK.
The color-coding is visible only on your Mac; it’s not shown when you look at your messages on other devices.
