Reset passcode for 7000 series watch

Son #1 forgot his watch passcode and has unpaired from iphone. Son #2 wants to use watch. Unable to reset using support instructions. When holding power button down, only see 3 options:

• Cancel
• Power Off
• SOS

If I hold the power and digital crown down at the same time, it goes through a hard reset. If I let go of the power button once I get the three options above, and then hold the crown down, it takes me to the standard charging screen. HELP US! :)
