How to tell a shortcut to hang up the phone?
Is there a way to tell a shortcut to hang up the phone when I’m on call without me having to press the red in button that shows in the phone app?

There is no Shortcut that can do this.
But you can deactivate Call Waiting, so you will not receive calls while you already have an active call.
Go to:
Settings -> Phone -> Call Waiting -> deactivate.
