I want to buy a m2 MacBook air, But for personal reasons the camera must be taken off, The question is it applicable to be done?, or is there any option to make a special order for me without camera?

You cannot remove the camera at purchase and any attempt to do so after purchase will void the warranty. If you want to block the camera, simply use some black electrical tape cover the opening.
This is going to be true with most all laptops sold today.
