Looks like we are being giving a lot more control in Mail using Ventura:

There's an Apple Support article that may be more help ... ie: if you have IMAP

accounts: Change Mailbox Behaviours settings in Mail on Mac – Apple Support

(For Ventura) says:

"Use Mailbox Behaviors settings in Mail to change where draft, sent, junk, deleted and archived messages for an email account are stored.

To change these settings in the Mail app on your Mac,

choose Mail > Settings, click Accounts, then click Mailbox Behaviours.

Note: Mail stores messages in the mailbox you specify for each option".

(NB: There are more explanatory details in the article itself)

Continues:

Choose a mailbox on the mail server or on your Mac to store junk messages.

This option is available only for IMAP accounts.

Note: Select this option on each Mac where you use your account, to avoid having two Junk mailboxes in the Mail sidebar."
