Migration assistant
Do I use the migration assistant to move files from my old Mac desktop (2011) before or after installing new MS Office Home & Student 2021 on new MacBook Air?

Either way is fine. However, please note that when you set up Migration Assistant you will be asked what to transfer. Each group is all or none. So, I suggest not transferring any apps. Some people feel it is better to reinstall them and get clean copies. Enjoy your new Mac.
