Use the Lightning to 3.5mm headphone adapter to plug the headphones into the iPhone.
If the headphones have a microphone, it will automatically be used for calls.
If they don't, then the iPhone will use its built in microphone instead.
There's nothing special you need to do beyond connecting the headphones to the iPhone.
If you are having a specific issue, then explain what that is.

My EarPods w/3.5mm connector and the lightning adapter works fine for listening to podcasts on my iPhone14. They don't work when I try to answer or place a call. When I plugged in my wife's EarPods w/lightning connector I am able to place and recieve phone calls. I guess the adapter doesn't support phone calls.
