Is there a way I can talk rather than type my notes on my iphone

If you want it like a voice note, you can use the voice memos app.
If you want speech to text, you can simply use the built in function for that. To use it, you tap on a note so the keyboard appears, and then you tap on the microphone symbol that is on the keyboard, now you can start dictating
