Undo not working

How do I recover my notes deleted by mistake. The undo button is greyed out infact majority of the actions are greyed out. Please urgently assist

To recover Notes stored locally, "On my Mac," restore a Time Machine backup: Recover all your files from a Time Machine backup - Apple Support.
