Can I group my music by genre or style in iTunes?

Yes, use the column browser. Your music is sorted by up to five categories (Genres, Composers, Groupings, Artists, and Albums), divided into columns. See:

Find a song with the column browser in iTunes on PC - Apple Support

and

Sort songs in Music on Mac - Apple Support

(The same should apply to a PC. Just substitute iTunes for Music.)
