Transfer a physical SIM or eSIM on your previous iPhone to an eSIM on your new iPhone after setup

  1. On your new iPhone, go to Settings > Cellular > Add Cellular Plan.
  2. Choose a cellular plan to transfer from another device. ...
  3. Check for instructions on your previous iPhone to confirm the transfer.

Yes, you can do that but will depend on the country and the service provider.

There are four options --> Find wireless carriers and worldwide service providers that offer eSIM service - Apple Support

  1. Wireless carriers that support eSIM Carrier Activation
  2. Wireless carriers that support eSIM Quick Transfer
  3. Wireless carriers that support other eSIM activation methods
  4. Wireless carriers that support eSIM activation on prepaid plans for international travelers

Good News: Your “phone number” is a matter between you and your carrier.

Within some VERY broad technical constraints, you can move the number to virtually ANY other physical mobile device you desire.

eSIM makes this VERY easy; althogh since your old device is presumably inoperative; you’ll need to go thru an “external” authentication process - either over the phone or online. (designed to prevent phone number theft - aka “SIM Swap Fraud”)
