Does Apple Watch Ultra in Hong Kong support UK carriers?

According to Apple, there are only two models of Apple Watch. But there is actually 3 models somehow. A2622 for NA, A2684 for Europe and rest of the world, and A2859, which "has been optimized for use in China mainland, Hong Kong, and Macao." So does A2859 support Europe and the rest of the world or no? Since I am currently in Hong Kong and plan to move to the UK.
