It's first time I backup my iPhone to Windows iTunes and It shows this message:
I want to be sure no iPhone Data is deleted, Can I click on continue ?
I don't want any synchronization to Windows iTunes but only backup.
When you synchronize, your iPhone matches the content with what is stored in iTunes. For example Contacts, Calendar, Pictures, Music and Movies.

You can only sync your device with one iTunes library at a time. If you see a message that your device is synced with another iTunes library, your device was previously connected to another computer. If you click "Erase and Sync" in that message, all content of the selected type on your device will be erased and replaced with content from this computer.

If you want an alternative way to make a back up, you can also use iCloud Backup. iCloud Backup is stored and encrypted in iCloud, and can be loaded onto a new iPhone if you need it one day.

Can iTunes permit to backup different devices to the same computer?
I have only a Windows computer and multiple iPhone and iPad.
My devices are not synchronised to any devices but I hope iTunes shows alert or message before to start this destroyed process.

I can't promise that your iPhone won't sync!, but you can try turning off automatic syncing. Go to iTunes preferences, tap Devices, and check "Prevent iPods, iPhones and iPads from syncing automatically"
Yes, iTunes can easily back up multiple devices on the same computer. But you just have to be aware that if your devices are synchronized with other iTunes Libraries, the content on them will be deleted and overwritten with what is in your iTunes.
