I’m not talking about the Lunar Face Gallery.
For other Face Gallery option like “Modular” or “Infographic” , as you can see the picture below , the calendar column doesn’t has the “Lunar Date” option.
While my friend’s Apple Watch SE has the “Lunar Date” option. (As picture below)
We both are the same OS (9.3.1). Please advice!!!!

I was wrong! There doesn't appear to be anymore complications for "Calendar - Lunar Date".
I believe that watchOS 9.0 is where the change occurred and with the introduction of the Lunar watch face.
You said that your friend has an SE, but I believe that he has the first generation SE and you have the 2nd Generation SE.
His watch is more than likely running watchOS 8.7 which appears to be the latest version for that watch. Have him send you a watch screenshot of the version number when he follows these steps: Settings, > General, > About

Is your friend using a different watch face? Probably so.
