How do I close multiple apps at one time on my iPhone 12phone?

You cannot. Apps can only be closed on at a time. You can swipe up from the bottom of the screen and stop in the middle, then swipe each app thumbnail up and off the screen to close it.
In general there is no need to actually close apps unless they are frozen, or misbehaving somehow. Otherwise, it's best to leave them there and let iOS manage them.
