You can’t. You can change the password for notes you create going forward, but you can’t reset the password on existing notes. If you can’t remember the password for your encrypted notes, they are unreadable. That’s the entire point of encrypting them to begin with.

On your iPhone, go to Settings>Notes>Password. Then click on device password. See if that will allow you to enter into your Notes using device password rather than the notes password.

So what your saying is, you can’t reset the Notes password, so a person would have a bunch of Notes just sitting there, never to be opened again? You can’t even delete them?
Essentially correct. You could delete them if you erased the phone.
Wow! That seems a bit excessive for Notes… but I guess some people have passwords and private info on there- like KiltedTim said… “That’s the entire point of encrypting them to begin with”…
