On my iPad/phone: I’m not clear about protecting certain emails from being deleted from my Inbox when I hit the ‘delete all’ button. I thought flagging saved these automatically, but apparently not. Should I be identifying these as ‘important’ rather than flagged? Thanks

Flagging an email wouldn't prevent it from being deleted when using the Select All option. The resources below also have more details:

1. Go to your Inbox in Mail.
2. Tap Edit in the upper-right corner.
3. Select the email messages, then tap Move.
4. Choose a mailbox to move the email messages to.
