What are “intervals” in the Apple Watch sleep tracker?

I'm not sure what intervals you are referring to unless it is the Stages in the 'View your sleep history' section of:

Track your sleep on Apple Watch and use Sleep on iPhone - Apple Support

which I think is fairly self-self-explanatoiry.
