The Mac has no full-speed real-time Video input hardware.

If you have a modern video recorder, that best way to proceed is to transfer digitized video via USB or use adapters to 4-pin camera connector, which is usually a variant of FireWire.

you can use a video capture device. the one I use is the Narvitech Saturn NV100C. that specific one is not supported past Catalina. but the link will illustrate what you can use.
