IPhone transfer

It depends on your connection speed and the amount of data you are transferring. I've seen it take about a couple of hours but it could be longer. Transfer data from your previous iOS or iPadOS device to your new iPhone or iPad - Apple Support

You can do it far faster by backing up the 12 to a computer, Mac or PC, and restoring that backup into the 14. The wireless transfer works but it is far slower.
