I will be using eSIM Internationally when arriving in Spain and Portugal. When that plan use is completed 30 days later, will my SIM function as before and used as before eSIM?

A question to ask your phone carrier, as that is their feature, not Apples.
Adding an eSIM from a Spanish or Portuguese Carrier (or any other) will not change your current physical SIM card. It will still work while you are using the eSIM and when you have finished using the eSIM. You just get an extra connection you can call/text and use data from.
Your physical SIM card will be active while you use the eSIM, so be aware of roaming charges. Alternatively, you can take out your physical SIM card. But contact your current Carrier to get the most optimal solution.
