Walking Heart Rate Average

Mirroring doesn't mean that everything that appears on your phone also appears on your watch. The full iPhone Health app isn't on the watch. Again, the things you're asking about are not things that are measured-- they are things that are calculated from measurements. The watch is way more limited in calculating power and storage than the phone.
I got that list from Health>Summary>Show All Health Data (after Workouts)
The Summary shows the things you pick as your favorites.

What I am missing are
Asymmetry
Walking speed
Double support time
Step length
Thanks for your reply. I have those items as favourites and, hence I get them through my phone. As my watch is mirroring my phone they should also be recorded by the watch but they are not.
Thanks, I just found out this. The source of all those items is the phone. The watch does not measure them.
