I just updated my MacBook Air model A2337 to macOS ventura, however, whenever I try to put any accent marks on my letters when writing something by holding the key on my keyboard, the display menu that appears to dad anny accent to your letter isn't shown.

Accents not showing in Ventura
Some third party Anti-virus this is a known issue, ex:
uninstall third party Anti-virus esp Webroot—
no insight or resolve, accent mark lost, try from Terminal.app copy and paste::
defaults write -g ApplePressAndHoldEnabled -bool true
reboot the machine if necessary,
