Need a dog walking Workout for watch

Is there a way to create a new Workout where the workout doesn't keep asking or on its own pausing my workout? I use the Outdoor walk almost daily while hiking and walking my dogs. They are on their own Sniffari's and take their own sweet time, and a lot of treat stops for training. I know you can customize a new workout, but not sure how to create a longer "idle" pause, before the watch stops tracking.
