My photo album and my son’s are mixed up

So I have an iPhone and iPad that I am sign in on using my Apple ID. My son has an I phone that he is signed in on using his own Apple ID. He sometimes uses my iPad and signs into it using his own Apple ID.

on our IPhones we somehow share photo libraries. I see the photos he takes and he sees mine. We also use screen time and family sharing.

how fo we separate our photo libraries so we can’t see each others photos?

One cannot simply log into an iPad using other credentials; that would cause items on the iPad to sync to the new account. To log into different accounts requires completely wiping and resetting the device. Set up the devices using whomever should be the account owner. Then, you’ll need to delete the images not yours from each device
