My text messages to non iPhones have stopped going through since the latest update. I have a 14.

Try restarting your iPhone first.
Also check if you are connected to your Carrier's network after the update. When the iPhone updates, it restarts - after a restart, the PIN code for the SIM card is required to connect to the network. Without a connection to the network, the normal text messages cannot be sent. iMessages like sending between iPhones can be sent via Wi-Fi.
Pull down your Control Center from the top right corner and check if you can see your carrier name in the top left corner. If the name appears, you are connected.
If you use eSIM, check if it is active here:
Settings → Cellular → Turn On This Line must be active.
If you still cannot send text messages, you must contact your carrier, as they handle them.
