Email signature with logo in Mail on iMac
How can I embed my logo in my email signature without creating an attachment?

Impossible. Everything is an attachment. The best you could do is link to an externally hosted site. But then the image would almost certainly be blocked. And the site would have to have a very special certificate to display in image in Mail. All of of that would be part of an HTML attachment.
I strongly recommend that you stick to plain text signatures. No images. No fonts. No styles. Nothing.
