When connected via Bluetooth to my 2019 Intel MBP, the lag is atrocious and practically impossible to use, but no lag with lighting to the USB-C cable connected to the laptop.

The solution is ridiculously simple. Connect the charging cable to the keyboard, then switch the keyboard off, wait a few seconds and switch on.
It should now be fine!
Always ensure that the keyboard is at least 50% charged - and switch on and off (like a reboot) every few days. Do the same with the Trackpad (assuming you have the Magic Trackpad)
