What features in Ventura OS are discontinued?
Comparing to Monterey, I was googling for discontinued features but could only find the new features

Trying to get a list of discontinued or altered features is a waste of time. It's too big and too vague. A modern OS does thousands of things, tens of thousands. So, best to ask specific questions like in this app I can do something, is that still there in the new version. That can yield useful information, and much faster than big vague queries.

Here an example that I cannot do on App Books in Ventura: sort by Collection
Or while selecting a book from All Books, it does not tell you which Collection it belongs to
The one that most complain about is the removal of the energy saver start up and shut down user interface pane. If you want to set this feature you have to use terminal which is not very convenient for most users.
I found the Books App has no more the sorting options from Moterey, for example cannot sort by size etc

FWIW, there are no discontinued features I'm aware of. However, there are changes to how certain features are accessed. The biggest change is the new layout of System Settings vs System Preferences in Monterey.
I don't have those options in Monterey either.

It becomes incumbent on the user to decern the differences between the two versions of macOS

Though, perhaps the user may try to find something of More Significant difference in the Operating System
Some Apple builtin Applications may be a little different or appear to be different but basically all works much like in Monterey
One of the Biggest Hot Topics are the Notifications from Third Party Processes which presents Notifications what did not appear in macOS 12 Monterey

That's not correct. Ventura has the same sorting options as Monterey. Monterey never had a sort by size for Books.
